In traditional braising processing technology, after hot processing, food is primarily cooled using natural methods, resulting in a comparatively slow process. Extended exposure of food to natural airflow poses risks of oxidation, discoloration, water loss, out of shape, and bacterial infection. These issues contribute to food safety hazards. Conventional cooling methods like air cooling, water cooling, and cold storage suffer from drawbacks such as inefficiency, high energy consumption, and poor hygiene, making it challenging to meet the production demands of large-scale braising processing. Huansu's vacuum pre-cooler (braised products series) leverages vacuum cooling technology to achieve rapid, bacteria-controlled cooling for large quantities of braised food.
